In an attempt to stick to my gluten-free, dairy-free diet, I found this recipe and wanted to try it! Yes, it's against my chocolate-free diet but.... I purchased all of the necessary ingredients a few weeks ago and decided that today, being the dreary day it was, would be a good day to bake! As I stated in a previous post - sometimes I wonder why I say that I enjoy cooking/baking - when I have days like today! I looked up the recipe on the blog and collected my ingredients. First thing I notice - I bought the Blanched Almond Flour that the blogger states not to use!! GREAT!! I figured I'd use it anyway - what else was I to do w/ it!?!? The second thing that happened - I didn't have enough Agave Nectar. GREAT - GREAT!! I've been using it in Robert's oatmeal in place of honey. I was just needing a small amount - so I added honey to it!! Then I didn't have enough chocolate chips!! GREAT - GREAT- GREAT!!!! What's up w/ that!?!?! I ALWAYS have an abundant amount of chocolate chips. So I chopped up a couple of semi-sweet baking squares! I spooned the batter onto the pans as directed - but the longer they cooked - the more they became one!! Being the choco-holic that I am - I couldn't see wasting the "cookies" so we tried them! They were actually pretty good!! The blogger was right - I know, WOW - that the brand of Almond Flour that I wasn't supposed to use - was not a good brand for baking!! It was too course - the cookies were pretty "grainy". Seeing that I had to make some changes to the recipe - I'm not real sure what caused them to meld into one - the brand of almond flour, the addition of honey or the type of chips that I used. But I will say that I will try the recipe again - using the correct ingredients!!

....looks can be deceiving!!
